Use 1 tablespoon of dry rub per pound of chicken, pork, beef. Add more or less based on your personal preference.
Poultry or Pork
Season both sides of the poultry or pork and pat gently to adhere to the meat. Refrigerate for 8-24 hours to allow the seasoning to work its way into the meat before smoking or grilling.
Season the outside of your favorite steak or burger before grilling. Generously coat ribs, roast or brisket and let the meat rest for 30 minutes or refrigerate overnight before smoking or grilling.

Cafe Mocha Crock Pot Pork Tenderloin
2- 2 ½ LBS. pork tenderloin
Café Mocha Rub
1 sweet onion quartered
5 carrots peeled and cut into thick slices
12 oz. petite gold potatoes cut in half
1-2 TBS. oil
Coat pork tenderloin evenly with Café Mocha rub. Heat oil in a pan, place pork tenderloin in pan and sear. Brown on all sides. Place pork and onion into the crock pot. Separate onion, placing the pieces on top and underneath the meat. Set crock pot on high for 6 hours or low for 9 hours. After 3 hours add carrots and potatoes to crock pot making sure they are added to the liquid surrounding the pork tenderloin. Serve when carrots and potatoes are tender and pork reaches internal temperature of 145 degrees.
