MOJO Seasoning

This versatile seasoning can be used to barbecue, grill, roast or to create a special MOJO marinade when mixed with olive oil and citrus juices. A must-have for fish tacos!

Ingredients: Unrefined sea salt, garlic, lemon peel, orange peel, lime juice powder, lemon juice powder, lime peel, onion, cumin, black pepper, cilantro

 

MOJO Rub
Sprinkle generously over meat, poultry or fish. Refrigerate for 1 hour or more to allow the seasoning to work its way into the meat before smoking or grilling.

MOJO Sauce
Combine 1/2 cup sour orange juice (or 1/4 cup lime juice and 1/4 cup orange juice), 1/4 cup olive oil, and 2 teaspoons MOJO Seasoning or to taste. Use as marinade or table sauce. makes 3/4 cup.

Apple Cranberry Coleslaw
10 oz. shredded cabbage
1 Granny Smith apple, diced
1/2 green pepper, diced
1/2 cup dried cranberries
2 tsp. MOJO seasoning
4 tsp. balsamic vinegar
2 tsp. honey
2 tbls. olive oil
Zest and Juice from two lemons

Combine all ingredients, mixing well. Refrigerate to chill for at least an hour before serving.

 

MOJO Roasted Corn
3 Ears Corn
1 Tablespoon Butter Infused olive oil
1 ½ Teaspoons Mojo

Peel and clean corn. Place corn on large sheet of foil. Coat corn with 1 Tablespoon of oil and 1 ½ teaspoons of Mojo. Wrap the corn in foil and place on a grill set to medium heat. Roast for 10 minutes, and turn over and roast for another 10 minutes.


Mojo Fish Tacos
1lb. mild fish
¼ cup lime juice
¼ cup orange juice
¼ cup oil
2 teaspoons Mojo
Tortillas

Combine ¼ lime juice, ¼ cup orange juice, ¼ cup oil and 2 teaspoons of Mojo in a gallon size zip top bag. Place fish in bag allow to marinate in the fridge for up to 8 hours. Remove fish from marinade and place on a grill set to medium heat. Grill 3- 4 minutes each side until fish becomes flaky with the touch of a fork. Place fish on tortilla and top with shredded lettuce and diced tomato or onion. This recipe also works well with chicken or shrimp.
